Zucchini Bake

Ingredients:

4 c. sliced zucchini, cooked just until done
1 c. carrots, shredded
1/2 c. onion, chopped.
1 can cream of chicken soup
1/2 c. sour cream
1 box stuffing mix

Directions:

Combine all ingredients except stuffing mix. Put in 9x13 baking dish.
Mix stuffing according to package directions and spoon over zucchini.
Bake at 350 degrees for 45 minutes.
Optional: Add 2-3 cups cooked, cubed chicken to make a nice supper dish.
